French Tarragon Vinaigrette

Tarragon is a classic French herb used for salad dressings, sauces like hollandaise or bearnaise, and pairs well with chicken, fish or lamb. It has a mild anise flavor and is also known to aid in digestion. Here we offer the classic Tarragon Vinaigrette recipe. If you’ve never made a vinaigrette with champagne vinegar, then you are in for a treat.

Ingredients

  • 1 shallot, peeled and roughly chopped
  • 3/4 cup extra-virgin olive oil
  • 1/4 cup champagne vinegar
  • 4 teaspoons chopped fresh French Tarragon
  • 1 1/2 teaspoons honey
  • 2 teaspoons Dijon or brown deli mustard
  • 3/4 teaspoon salt
  • Freshly ground pepper to taste

Method

  1. Combine shallot, oil, vinegar, honey, French Tarragon, mustard, salt and pepper in a blender, mini prep or jar with an immersion blender. Puree until smooth.
  2. Serve immediately or store refrigerated in a jar up to 1 week. The oil will solidify in the refrigerator, so take out the jar about 15 minutes before dressing your salad and shake well to emulsify.
