Garlic scapes are blended with walnuts and fresh basil to make a delicious, creamy spin on classic pesto. Spread this on sandwiches, serve with crudite, or toss with hot pasta to add delicious, seasonal flavor to any meal.

Ingredients
- 9 garlic scapes, cut into 1-inch pieces (roughly 1 ½ cups)
- 1/3 cup roasted walnuts
- 1 cup fresh basil, loosely packed
- 1/3 cup freshly grated Parmigiano Reggiano cheese (or parmesan)
- 2 Tablespoons fresh lemon juice
- ½ teaspoon kosher salt
- ½ cup extra virgin olive oil
Method
- Add garlic scapes to food processor with walnuts. Process for 30 seconds.
- Add basil, cheese, lemon juice, salt and olive oil. Process until mostly smooth, stopping to scrape down the sides if necessary.
