Seasonal fennel gets the BBQ treatment, adding depth of flavor and texture and brightened up with fresh herbs and lemon juice, making this the perfect accompaniment to any summer meal.

Ingredients
- 2 bulbs fennel, trimmed and sliced ½ inch lengthwise, keeping core intact
- 2-3 Tablespoons extra virgin olive oil
- Salt and freshly ground black pepper
- ½ fresh lemon, zested and juiced
- Chopped fresh tarragon and/or fresh mint, to taste
Method
- Heat grill to medium high heat. Brush fennel lightly with olive oil, and place directly on the grill.
- Grill fennel until lightly charred, about 3-5 minutes each side. Remove from grill and place on serving dish. Sprinkle with lemon zest and lemon juice, salt and pepper, and chopped fresh tarragon/mint, if using. Serve.
