Martha's Scrambled Eggs with Chives & Whipped Cream Cheese

MARTHA’S SCRAMBLED EGGS & WHIPPED CREAM CHEESE

 

Chives are an old-school herb that are often used in potato and egg dishes. They can be minced and sprinkled on top of soups, salads, baked potatoes, omelets, and more. Chives can also be whipped into cream cheese or compound butter.

Ingredients

  • 3 Tablespoons of chopped Chives
  • 4 chicken or duck eggs, or a combo of both (we often use 2 of each)
  • 1 teaspoon of salted butter
  • 4 teaspoons of whipped cream cheese

Method

1) Sauté the chopped chives on low heat in a frying pan with a teaspoon of salted butter for approximately 1 minute, just to soften.

2)  In a separate bowl whisk 4 eggs, then add to the pan with the chives.

3)  Scramble to desired doneness.

4)  Just before serving, add 4 teaspoons of whipped cream cheese into the eggs, distributing evenly. 

5). Gently fold and stir eggs to incorporate the whipped cream cheese.

6)  Add salt to taste and serve immediately.  Enjoy!
