Peach & Tomato Caprese Salad

I’m a big fan of a good salty/sweet combination, and by including peaches in this classic Caprese Salad, it hits just right. Purple Opal Basil has a crunchy texture, and has a mild, spicy basil flavor with hints of cinnamon, anise, mint, and clove. Some say it's milder than other types of basil, with a touch of lemon-lime on the palate. In addition to this delicious addition, the color contrast of the purple basil, peaches and tomatoes against the white mozzarella makes for a beautiful presentation. You really do eat with your eyes first!

Ingredients

  • 1/2 cup of White Balsamic Vinegar
  • 1 clove of garlic, minced
  • 3 tablespoons of honey
  • 3 tablespoons of extra virgin olive oil
  • ¼ teaspoon of sea salt
  • 2 fresh ripe peaches, cut into 1 inch pieces, or sliced
  • 2 pounds of assorted tomatoes (slicing and cherry are a nice combo), sliced and cut into bite sized pieces (please remove seeds and juices if plentiful)
  • 10-12 fresh Purple Opal Basil leaves, whole or chopped
  • 8 ounces of fresh mozzarella sliced or cut into bite sized pieces
  • Flaky salt for serving
  • Freshly cracked pepper for serving

Method

  1. In a large bowl, whisk together the vinegar, garlic, honey, olive oil and salt.
  2. Add the peaches, tomatoes, basil and mozzarella to the bowl, toss to combine with the dressing.
  3. Sprinkle with flaky salt & freshly ground pepper to taste.

Please Note: Alternatively, you can slice the peaches, tomatoes and mozzarella. Arrange on a serving platter, tuck in whole basil leaves then drizzle with dressing.
