Easter Tulips, Cookies & Donko Shiitakes

Hello Friends,

I hope this note finds you well.  I am excited to share that the early season tulips that we planted last fall in our High Tunnel are ready just in time for Easter.  We are offering ten stem tulip bouquets shown in the photos below for $20, with two different color combinations:  Purple, Pink & Yellow, or Purple, Pink & White.  We also made adorably delicious Easter cookies in our Prep Kitchen with natural food coloring.







 

We got a good flush of Donko Shiitake mushrooms this week that are available in our online store now. 

Donko shiitakes are a variety that is particularly prized in Japan, known as "Donko" or "Flower" shiitakes. The best part is that they are grown right here in our mushroom yards on our Forest Farm in Peapack, NJ.

Due to cold nights, warm days, and rain followed by dry spring winds, the thick cuticle of the mushroom cap stretches and cracks. As a result of this, the mushroom gets a crazed, bumpy pattern that looks like big floral buttons. Also known as 'Flower Mushrooms', they have a meaty, chewy texture and smoky, umami-rich flavor. Perfect for making a mushroom risotto, ramen, or simply sautéeing, Donko Shiitakes are super healthy as well as delicious.





The girls have been busy laying eggs, so we've now turned on our egg subscriptions so that you can be sure to have farm fresh eggs that are pasture raised.  That means that they are out foraging and being their best selves outside all day in our wooded farmyard.  We feed our flock soy free organic feed from a local mill in PA.
